Chipotle Beef Loaded Fries with Salsa

Ingredients
Fries
- 1 bag shoestring fries
- ½ bag grated Gouda cheese
Beef
- 1 pack beef mince
- 2 Tbsp onion, garlic and ginger paste
- ½-1 sachet chipotle sauce
Salsa
- 1 capsicum
- 2 tomatoes
- ½ telegraph cucumber
- 2½ Tbsp coriander
- 2½ Tbsp mint
- Drizzle of white wine vinegar
Caper Sour Cream
- 1 pottle sour cream
- 1 pottle caper crème (optional)

Preheat oven to 230°C. Line an oven tray with baking paper. Pat fries dry and toss on prepared tray with a drizzle of oil. Season and arrange in a single layer. Bake fries (on second highest rack) for about 15 minutes, until tender. Turn oven to high grill. Grill fries for about 5 minutes, until golden and crispy.

While fries are cooking, heat a drizzle of oil in a large fry pan on high heat. Add beef mince, onion, garlic and ginger paste and cook for about 5 minutes until mince is cooked through, breaking up mince with a spoon as it cooks.

Remove pan from heat and stir through chipotle sauce and season to taste. When fries are golden, spoon over mince mixture, sprinkle with cheese and grill for a further 5 minutes, until cheese is melted and golden.

While cheese is melting, prepare salsa. Dice capsicum, tomatoes and cucumber 1-2cm and roughly chop coriander and mint. Toss together in a medium bowl along with vinegar and a drizzle of oil and season to taste. In a small bowl mix together, sour cream and caper crème.

To serve, divide chipotle beef loaded fries between plates and top with salsa and a dollop of caper sour cream.
