Chermoula Beef Pave Steaks with Super Vegetables and Feta

Peel the cucumber into ribbons if you want the yoghurt sauce to be thicker.
Ingredients
SUPER SEED VEGETABLES
- ½ broccoli, cut into small florets and stalk diced 1cm
- 200g peeled pumpkin, diced 2cm
- ½ red onion, diced 2cm
- 1 teaspoon oil, for cooking (or use spray oil)
- 18g super seed mix
- 20g chermoula dressing
- 1 tomato, diced 1-2cm
CHERMOULA BEEF PAVE STEAKS
- ¾ teaspoon oil, for cooking (or use spray oil)
- 275g lean beef pave steaks (at room temperature)
- 1 clove garlic, minced
- 2 teaspoons chermoula spice
CUCUMBER YOGHURT
- ¼-½ Lebanese cucumber
- 20g chermoula dressing
- ¼ cup yoghurt
TO SERVE
- 25g feta cheese

Preheat oven to 220ºC. Line an oven tray with baking paper. Prepare ingredients. Preheat BBQ grill or hot plate (if using).

Toss broccoli, pumpkin and onion with oil on prepared tray and spread out evenly. Season and bake for about 18 minutes. Remove from oven, sprinkle over super seed mix and continue to bake for 3-4 minutes until seeds are lightly golden and vegetables are tender.

While vegetables cook, prepare beef. Heat oil in a medium fry-pan on medium-high heat. Pat beef dry, rub with garlic and chermoula spice mix and season. Cook beef for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ. Set aside to rest, covered, for 3-4 minutes.

While beef rests, grate cucumber and squeeze out excess liquid. Add to a small bowl and mix with second measure of chermoula dressing and yoghurt. Season and set aside.

Once vegetables are cooked, add to a medium bowl. Toss through first measure of chermoula dressing and tomato. Season to taste. Once beef has rested, slice against the grain reserving any resting juices.

To serve, share super seed vegetables between plates. Top with chermoula beef and spoon over resting juices (if desired). Dollop over cucumber yoghurt and crumble over feta.
