Beef and Mushroom Bolognese

Ingredients

BEEF AND MUSHROOM BOLOGNESE

  • ½ teaspoon oil
  • ½ brown onion, finely diced
  • ½ punnet white button mushrooms, sliced
  • 250g lean ground beef
  • 1½ teaspoons Italian spice mix
  • ¼ teaspoon salt
  • 1 tablespoon tomato paste
  • 2 cloves garlic, minced
  • ½ carrot, grated
  • 2/3 can chopped tomatoes
  • 1½ teaspoons balsamic vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon honey
  • 3/4 cup stock

PULSE PENNE

  • 85g pulse penne pasta

COURGETTE AND BASIL

  • 1 courgette
  • 2-3 tablespoons basil
  • ½-1 tablespoon feta cheese
  • ¼ teaspoon extra-virgin olive oil

Steps

  1. Bring a medium pot of salted water to the boil. Prepare Bolognese ingredients.
  2. Heat oil in a medium fry-pan on medium-high heat. Cook onion with a pinch of salt for 3-4 minutes, stirring often, until starting to soften. Add mushrooms and continue to cook, stirring often, for 2-3 minutes, until mushrooms are soft.
  3. Add beef, Italian spice mix and salt. Increase heat to high and cook for 2-3 minutes, breaking up beef as it cooks, until browned.
  4. Add tomato paste, garlic and carrot. Stir to combine and cook for about 2 minutes, until carrot has softened.
  5. Add all remaining Bolognese ingredients to pan, stir to combine and bring to a simmer. Reduce heat to low-medium and cook for 8-10 minutes, or until sauce has thickened and vegetables are tender. Season to taste.
  6. While Bolognese cooks, cook pulse penne in pot of boiling water for 7-8 minutes, until tender. Return pasta to pot and season. Add a teaspoon or twoof hot water if pasta starts to stick together.
  7. While pasta cooks, peel courgette into ribbons and thinly slice core. Roughly tear basil, crumble feta and toss all in a medium bowl with olive oil. Season to taste.
  8. Toss pasta through Bolognese sauce and season to taste.
  9. To serve, spoon pulse penne and beef and mushroom Bolognese into bowls. Top with courgette and basil.
