Sweet Chilli Glazed Fish with Lemon Feta Smash

Leave some fish plain for fussy eaters and just follow cook times in recipe. We think your kids will enjoy the sweet tangy flavours though.
Ingredients
Lemon Feta Smash
- 600g baby potatoes, quartered
- 1/3 bag baby spinach leaves
- ¾ teaspoon mustard (e.g. Dijon, wholegrain)
- Zest of ½ lemon (optional, adults)
- Juice ½ lemon (optional, adults)
- 3 tablespoons mayonnaise
- 50g feta cheese, crumbled
Sweet Chilli Glazed Fish
- 450g fish fillets
- 1 tablespoon mild sweet chilli sauce
- Zest of ½ lemon
Vegetables
- 200g green beans
- 1½ cups frozen corn

Bring a medium and a small pot of salted water to the boil. Preheat oven to 220°C. Line an oven tray with baking paper. Prepare ingredients. Cook potatoes in a medium pot of boiling water for 12-14 minutes. Drain, return to pot and set aside, covered, to keep warm.

While the potatoes cook, pat fish dry, remove any remaining scales or bones. Place fish on prepared tray and season with salt. In a small bowl mix together sweet chilli sauce and lemon zest. Spread evenly over fish and set aside while you prepare vegetables.

Trim ends off beans and slice in half. Thinly slice spinach leaves and set aside.

Bake fish for 6-7 minutes until fish is just cooked through. While the fish cooks, cook beans and corn in small pot of water for 3-4 minutes, until beans are bright green and tender. Drain and set aside to keep warm.

Crush potatoes lightly with a fork (but do not mash). Add all remaining lemon feta smash ingredients and fold through gently to mix. Season to taste.

To serve, divide sweet chilli glazed fish, lemon feta smash and vegetables between plates.
