Kumara Beef Cottage Pie with Crunchy Salad

If you have an oven-proof frypan, just layer the beef, mash then cheese directly into the pan before grilling in the oven.


Ingredients

Kumara

  • 800g kumara, peeled and diced 2cm
  • 2 tablespoons butter
  • 1 tablespoon milk

Beef Cottage Pie

  • 600g beef mince
  • 1 brown onion, finely diced
  • 1 clove garlic, minced
  • 1 carrot, grated
  • 1 teaspoon salt
  • 70g tomato paste
  • 2 tablespoons beef spices
  • ¼ cup white wine (optional)
  • 1 cup beef stock
  • 1½ tablespoons Worcestershire sauce
  • 70g Parmesan cheese

Crunchy Salad

  • 2 tablespoons olive oil
  • 2 teaspoons vinegar (e.g. red wine, white wine, cider)
  • 1-2 teaspoons mustard (e.g. wholegrain, Dijon)
  • 1 pear
  • 1 cos lettuce
  • 1 tomato

Steps

  1. Preheat oven to high grill. Bring a medium pot of salted water to the boil. Set aside an oven-proof dish (measuring about 20 x 25cm). Prepare vegetables. Cook kumara in pot of boiling water for 15-17 minutes, until tender. Drain well, return to pot with add butter and milk and mash until smooth. Season to taste and set aside.
  2. While kumara cooks, heat a drizzle of oil in a large fry-pan on high heat. Cook beef for about 4 minutes, breaking up with a wooden spoon, until browned. Add onion and cook a further 2-3 minutes, until softened.
  3. Add garlic, carrot, salt, tomato paste and beef spices to beef mixture and cook for 2-3 minutes, until carrot softens and spices are fragrant. Add white wine (if using) and stock, and simmer for 2-3 minutes, until thickened. Stir through Worcestershire sauce and season to taste. Pour mixture into oven-proof dish.
  4. Evenly top beef mixture with mashed kumara and grate cheese over top. Grill for about 6 minutes, until bubbling and starting to brown.
  5. While cottage pie cooks, whisk olive oil, vinegar and mustard together in a large bowl. Thinly slice pear; roughly chop lettuce; dice tomato 2cm. Add veggies to bowl with dressing, toss to combine and season to taste.
  6. To serve, divide kumara beef cottage pie between plates and serve crunchy salad on the side.
