Ready Made Mexi Chicken Protein Bowl with Brown Rice

At least 40 grams of protein per serve. Free-range chicken, black beans, sweet corn and peppers are simmered in a tasty smoky BBQ Mexican sauce. Topped with cheese and served with a side of steamed brown rice and sour cream.


Ingredients

Rice

  • 1/2 cup brown rice

Mexi Chicken Protein Bowl

  • 1 Ready Made Mexi Chicken Protein Bowl

To Serve

  • 2 Tbsp sour cream

Steps

  1. Bring a pot of water to the boil.
  2. Add rice to pot of boiling water. Bring back to the boil and cook rice (ensuring a rapid boil) for 25-30 minutes, or until grains are tender. Drain well through a sieve.
  3. Place Mexi chicken into a medium pot, cover with a lid and cook on medium heat for about 10-15 minutes, stirring often until piping hot. Season to taste with salt and pepper.
  4. Plate rice and Mexi chicken and dollop with sour cream.
