Thai Beef Laab & Veggie Lettuce Cups with Sesame Rice

Lettuce cups are fun! But if you’d prefer, chop the lettuce and serve on a plate with all remaining toppings as a salad.
Ingredients
Sesame Rice
- 1 pack Japanese brown rice
- 2 cups water
- 1-2 teaspoons sesame oil
- ¼ teaspoon salt
Veggie Lettuce Cups
- 1 baby cos lettuce
- ½ telegraph cucumber
- 1 carrot, grated
- ½ red onion
- 1 sachet Thai dressing
Thai Beef Laab
- 1 pack beef mince
- 1 pottle garlic and ginger paste
- 1 pottle lemongrass, makrut lime paste
- Pinch of chilli flakes, chilli powder or cayenne powder (optional)
- 2 teaspoons soy sauce
- 2 teaspoons fish sauce
- 3-4 teaspoons brown sugar
To Serve
- 1 sachet peanuts

Combine all sesame rice ingredients in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

While rice cooks, prepare vegetables. Separate lettuce leaves; cut cucumber in half lengthways, scoop out seeds then thinly slice; grate carrot; thinly slice red onion. Place all in a medium bowl, along with Thai dressing.

Heat a drizzle of oil in a large fry-pan or wok (preferably non-stick) on medium-high heat. Cook beef mince, garlic and ginger paste, lemongrass makrut lime paste, a pinch of salt and chilli/cayenne (if using) for 4-5 minutes, until cooked through and any liquid has evaporated. Break up beef mince with a wooden spoon as it cooks.

Add soy sauce, fish sauce and sugar to pan and cook for 1-2 minutes, until fragrant. Remove from heat.

To serve, fill lettuce leaves with ¾ cup sesame rice per person and top with Thai beef laab, vegetables, and a sprinkle of peanuts.
