Japanese Beef Bowls with Teriyaki Dressing

Be careful not to overcrowd the pan or overcook the beef as it will become tough and chewy.
Ingredients
Japanese Beef
- 450g beef schnitzel (at room temperature)
- 1 tablespoon Worcestershire sauce
- 2 teaspoons brown sugar
- 2 tablespoons olive oil
- 2 teaspoons Dijon mustard
- ¼ teaspoon salt
Chopped Veggies
- 1 carrot
- 1 capsicum
- ½ telegraph cucumber
- 1 spring onion (optional)
- ½ cos lettuce
Teriyaki Dressing
- 40g teriyaki sauce
- 1 teaspoon sweet chilli sauce
- ½ teaspoon sesame oil
- ½ teaspoon water
- ¾ -1 teaspoon finely grated ginger
To Serve
- 10g sesame seeds (optional)

Preheat BBQ hot plate to high (if using). Prepare ginger. Combine rice, water and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

Pat beef dry. In a medium bowl, mix all remaining Japanese beef ingredients together, add beef and toss to coat well. Set aside to marinate while you prepare the rest of the meal.

Grate carrot; slice capsicum into 5mm strips; slice cucumber into thin matchsticks; finely slice spring onion (if using); thinly shred lettuce. Set all aside.

Heat a drizzle of oil in a large fry-pan on high heat. Stir-fry beef, in batches, for about 1 minute, until just cooked through. Alternatively, use BBQ hot plate. Set aside, covered, to rest for a few minutes.

Combine all teriyaki dressing ingredients in a small bowl.

To serve, serve ¾ cup cooked Japanese brown rice into each bowl. Top with Japanese beef, chopped veggies and drizzle over teriyaki dressing. Sprinkle over sesame seeds (if using).
