Char Siu Pork with Crispy Noodle Salad

Alternatively, use BBQ hot plate or grill to cook pork. If your pork starts to brown too quickly, reduce heat to lowmedium.
Ingredients
Char Siu Pork
- 1 pack pork scotch fillet (at room temperature)
- 1 pottle char siu sauce
Crispy Noodle Salad
- 1 pack crispy noodles
- 1 pack crispy noodle nut mix
- 2 teaspoons butter, melted
- ¼ teaspoon salt
- 1½ cups frozen edamame beans
- 1 bok choy, ends trimmed 1cm, roughly sliced
- ½ telegraph cucumber
- 1 carrot
- 1-2 spring onions
- ½ pottle soy noodle dressing
To Serve
- ½ pottle soy noodle dressing

Preheat oven to 220°C. Line an oven tray with baking paper. Bring a full kettle to the boil. Preheat BBQ hot plate or grill to medium (if using). Prepare ingredients. Pat pork dry and place in a bowl with char siu sauce. Season and set aside to marinate for about 5 minutes. While pork marinates, toss noodles, crispy noodle nut mix and melted butter and salt on prepared tray. Cook for 3-5 minutes, until lightly golden. Toss once during cooking.

Heat a drizzle of oil in a large fry-pan on medium heat. Cook pork for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered, to rest for 2-3 minutes before slicing thickly against the grain.

Place edamame and bok choy in a heat-proof bowl. Cover with boiling water and a pinch of salt, cover and leave for 1-2 minutes, until bright green and just tender. Drain well.

Peel cucumber and carrot into ribbons, and thinly slice spring onions. Add all to a large bowl, along with edamame, bok choy, crispy noodle mixture and first measure of soy noodle dressing. Toss to combine and season.

To serve, divide crispy noodle salad between plates and top with char siu pork. Drizzle over remaining soy dressing.
