Pikelets with Lemon Curd

Ingredients

Pikelets

  • 1 packet pikelet mix
  • 1 egg
  • 1¾ cups milk
  • 1 tablespoon melted butter
  • 2 teaspoons vanilla essence

To serve

  • 1 pottle lemon curd
  • 1 cup berries (optional)
  • Ice cream or whipped cream

Steps

  1. Preheat BBQ hot plate to medium. Place pikelet mix in a large bowl. Make a well in the centre and add egg, milk, butter and vanilla essence. Whisk gently to combine (to avoid lumps), being careful not to over-mix. Rest on bench for about 5 minutes to allow mixture to thicken.
  2. Clean BBQ hot plate with an oiled paper towel. Spray or grease hot plate well with oil.
  3. Use a ¼ cup measure to pour batter onto hot plate, repeating with the rest of the mixture. Cook for about 2-3 minutes on first side, until bubbles appear evenly over surface and start to pop. Flip and cook a further 1-2 minutes, until both sides are golden and pikelets are cooked through.
  4. To serve, top with lemon curd, your favourite berries (if using), ice cream or whipped cream, or your favourite topping!
