
Falafel Wraps with Salad and Whipped Feta

Keep some salad separate for fussy eaters. Leave whipped feta out for fussy eaters
Ingredients
Falafel Wraps
- 1 tub basil and lime falafel mix
- 1 carrot, grated
- ¼ teaspoon salt
- 10 wholewheat wraps
Salad
- 2 teaspoons vinegar (e.g. red wine, white wine)
- 2 teaspoons olive oil
- ½ telegraph cucumber
- 1 tomato
- 1 carrot
- ½ iceberg lettuce
Whipped Feta
- 100g feta cheese
- 4-5 tablespoons hot water

Preheat oven to 200°C. Preheat BBQ hot plate to medium (if using). In a bowl, combine falafel mix, grated carrot and salt until well combined. Heat a drizzle of oil in a large fry-pan on medium heat. Use a tablespoon measure to scoop out mixture and dollop straight into the pan. Use the back of the spoon or spatula to lightly flatten patties.

Cook patties, in batches, for 1-2 minutes each side, until golden and cooked through. Add more oil to pan between batches if needed. Set aside on a paper towel.

While patties cook, cover wraps in foil and warm in oven for 5-10 minutes.

While wraps warm, whisk vinegar and oil together in a medium bowl. Dice cucumber and tomato 1cm; grate carrot; thinly slice lettuce. Add veggies to bowl with dressing and toss to combine. Season to taste.

Crumble feta into a small bowl, add hot water and mash out all the lumps using a fork. Whisk until smooth.

To serve, place everything in the middle for everyone to help themselves. Fill each wrap with a couple of falafel patties, salad and a large dollop of whipped feta.
