Parma Ham and Mozzarella Pizza with Salad

Ingredients
Parma Ham and Mozzarella Pizza
- 1 wholemeal pizza base
- 2 tablespoons pizza sauce
- ½-1 courgette, diced 1cm
- 60g sliced Coppa di Parma ham
- 50g mozzarella
- 1/3 bag rocket
- 2 teaspoons balsamic glaze
Capsicum Salsa
- ½ capsicum
- ½ Lebanese cucumber
- 2 tablespoons mint leaves
- Zest and juice of ¼ lemon

Preheat oven to 220°C. Preheat an oven tray. Alternatively use a pizza stone (if you have one). Prepare courgette, mint and lemon. Place a sheet of baking paper on bench and place pizza base on top. Spread over pizza sauce and sprinkle with courgette.

Lift baking paper, with pizza, onto preheated tray/ stone and cook for 8–10 minutes, until base is crispy.

While pizza cooks, dice capsicum 1cm and chop mint. Place in a bowl with lemon zest and juice, and a drizzle of olive oil. Season and toss to combine.

Remove pizza from oven and top with Parma ham. Tear mozzarella into small pieces and place on top. Sprinkle over some rocket and 2-3 tablespoons of capsicum salsa. Drizzle with balsamic glaze and a little olive oil. Cut into 6-8 pieces.

Dice cucumber 1cm. Add any remaining rocket and cucumber to bowl with capsicum salsa and toss to combine.

To serve, divide pizza between plates and serve any capsicum salsa on the side.
