Greek Lamb Pizza with Tzatziki and Rocket Salad

Remember to freeze your pizza bases on arrival and defrost in time for cooking on Thursday night.
Ingredients
Greek Lamb Pizza
- 2 pizza bases
- 1 pottle eggplant puree
- 1 pack Greek lamb mince
- ½ red onion, thinly sliced
- 1 Palermo capsicum, sliced 0.5cm
- 1/3 block feta cheese
- Zest of 1 lemon
- 2 handfuls of rocket
Tzatziki
- ½ telegraph cucumber
- 1 pottle natural yoghurt
- 2 tablespoons chopped mint leaves
Rocket Salad
- 1 bag rocket
- 1 sachet sliced almonds
- 1 tablespoon balsamic vinegar
To Serve
- 3 tablespoons picked mint

Preheat oven to 220°C. Preheat two oven trays (or two pizza stones if you have them). Prepare pizza. Lay two sheets of baking paper on bench and place a pizza base on top of each. Evenly spread eggplant puree over bases.

Using clean hands, tear away small amounts of Greek lamb mince and dot over top. Sprinkle over red onion, capsicum and crumble over feta cheese. Season with pepper.

Carefully lift baking paper with pizzas on top and place one onto each preheated tray, then carefully slide baking paper away (use a fish slice to help with this). Cook for 12-14 minutes, until bases are crispy and golden. Swap trays halfway to ensure even cooking.

While pizzas cook, prepare tzatziki and salad. Grate cucumber into a clean tea towel and squeeze out excess liquid. Add to a small bowl with yoghurt and mint, season and set aside. Add rocket to a medium bowl (reserve 2 handfuls for the pizza). Toss with almonds, balsamic vinegar, a drizzle of olive oil and season.

Remove pizzas from oven and sprinkle with lemon zest, reserved rocket and drizzle over tzatziki. Slice each pizza into 6-8 pieces.

To serve, divide Greek lamb pizza and salad between plates. Serve any extra tzatziki on the side.
