Potato Topped Pulled Beef Pie with Greens

This hearty and comforting pie is the perfect meal for a cosy night in. Tender pulled beef is combined with a rich and flavorful sauce, then topped with a layer of creamy mashed potatoes and baked until golden and bubbly. Each bite is pure comfort, making it the ultimate dish for a cold evening.


Ingredients

Potato Top

  • 400g potatoes, diced 2cm
  • 2 Tbsp milk
  • 1 Tbsp butter
  • 30g grated Parmesan

Filling

  • 1/2 leek, thinly sliced
  • 1 carrot, diced 1cm
  • 1 drizzle of oil
  • 1/2 Tbsp butter
  • 1 Tbsp flour
  • 1/2 pack beef pie herbs
  • 200g pulled beef
  • 1 cup beef stock
  • 1 tsp soy sauce

Greens

  • 1/2 broccoli, cut into small florets
  • 1 cup frozen peas

Steps

  1. Preheat oven to high grill. Dice potatoes 2cm. Add to a pot and cover with hot tap water and a pinch of salt. Cook on high heat on a rolling boil for 15-20 mins, until very tender. Drain and return to pot with milk and butter. Mash until smooth and season to taste with salt and pepper.
  2. Thinly slice leek. Dice carrot 1cm. Heat oil and butter in a frypan on medium-high. Cook leek and carrot with a pinch of salt for about 5-6 mins, until starting to brown. Add flour and pie herbs and cook for 1 min. Add beef, stock and soy sauce. Bring to a simmer and cook for about 5 mins, until thickened. Season to taste with salt and pepper.
  3. Transfer beef to a baking dish. Top with potato mash. Use a fork to make deep grooves into the topping. Sprinkle with parmesan.  Grill for 3-5 mins, until cheese is golden.
  4. While beef is simmering, boil a pot of salted water. Cut broccoli into small florets. Add broccoli and peas to pot of boiling water for about 3 mins, until tender. Drain and return to pot. Season to taste with salt and pepper.
  5. Plate up potato topped beef pie with greens on the side. Enjoy!
