Glazed Pork Sirloin Steak with Veggie Rice

Keep some vegetables separate and serve on the side. Serve some rice plain. Keep some steak plain and serve the glaze on the side for less adventurous kids.
Ingredients
Veggie Rice
- 1 cup jasmine rice
- 1½ cups water
- 1 cup frozen peas *
- 1 sweet Palermo capsicum, diced 1cm
- 1 courgette, grated
- 75g baby spinach, thinly sliced
Pork Sirloin Steak
- 550g pork sirloin steaks (at room temperature)
Pork Glaze
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 tablespoons tomato sauce
- 1 tablespoon sweet chilli sauce (preferably mild)
- 3 tablespoons water
Rice Dressing
- 2 tablespoons sweet chilli sauce (preferrably mild)
- Zest and juice of 1 lemon
- 1 teaspoon vinegar (e.g. white wine, red wine)
- 2 teaspoons mustard (e.g. wholegrain, Dijon)
- ½ teaspoon salt

Prepare veggies. Combine rice, water and a pinch of salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes.

Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking. When 4 minutes steam time remains, add peas to rice and fold through. Cover again, until ready to serve.

Pat pork dry and season. Heat a drizzle of oil in a large fry-pan on high heat and cook pork steaks for 2 minutes each (they will finish cooking with the glaze). Use tongs to hold pork, fat-side-down, for about 1 minute. Set aside, covered, to rest before slicing 1cm thick against the grain. Do not wash pan, reserve.

While pork is resting, mix all glaze ingredients together in a small bowl and set aside. In a large bowl, mix all rice dressing ingredients together. Add all veggie rice ingredients to large bowl with dressing and season. Toss to combine and set aside.

When pork has rested, return reserved pan to a high heat and add sliced pork steaks. Pour over the glaze. Turn off heat and allow to bubble for about 30 seconds, until glaze has thickened slightly and coated the pork.

To serve, place vegetable rice onto plates and top with slices of glazed pork steak.
