Saucy Hoisin Beef Stir-Fry with Udon Noodles & Cashews

Bursting with umami goodness, this fast and easy stir-fry is the perfect dinner. Udon noodles and seared NZ beef are coated in our sticky hoisin sauce to make a delicious dish that will be the star of your week.


Ingredients

Stir-Fry

  • 600g beef stir-fry
  • 1 broccoli, cut into small florets
  • 400g mushrooms, cut into quarters
  • 1 carrot, thinly sliced
  • 1 Tbsp sesame oil
  • 200g hoisin sauce

Noodles

  • 400g udon noodles

To Serve

  • 2 spring onion, thinly sliced
  • 1 pack chopped cashew nuts

Steps

  1. Pat beef dry. Cut broccoli into small florets. Cut mushrooms into quarters. Thinly slice carrot (S2 & S4 only). Thinly slice spring onion. Set all aside separately.
  2. Heat sesame oil in a deep frypan on high heat. Add beef and cook for 2 minutes, stirring constantly. Add broccoli, mushroom and carrot (S2 & S4 only) to pan with a splash of water and continue stir-frying for 3-4 minutes, until vegetables are tender and beef is medium.
  3. While stir-fry cooks, heat noodles in pack in the microwave for 2 minutes. Alternatively, soak the udon noodles in boiling water for about 3 minutes and drain well before stir-frying with veggies and sauce. Add noodles to pan along with hoisin sauce and heat through for 2 minutes.
  4. Top stir-fry with spring onion and cashews.
