Smoky Tomato Chicken

Ingredients

TOMATO SAUCE

  • 1 teaspoon oil, for cooking (or use spray oil)
  • 1 brown onion, thinly sliced
  • 1 clove garlic, finely chopped
  • 1 can tomatoes
  • 1 cup chicken or vegetable stock
  • 1 cup water
  • 100g split red lentils

SMOKY TOMATO CHICKEN

  • 2 teaspoons oil, for cooking (or use spray oil)
  • 550g lean chicken breast steaks
  • 1½ tablespoons smoky tomato rub

BALSAMIC TOMATO SALAD

  • 3 tomatoes
  • 2 courgettes
  • 1-2 tablespoons parsley
  • ½ lemon
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 50g balsamic vinaigrette
  • 75g baby silverbeet

TO SERVE

  • ½ lemon, cut into wedges
  • 1-2 tablespoons picked basil leaves

Steps

  1. Preheat BBQ grill or hot plate to medium-high (if using). Prepare ingredients. Heat oil in a medium pot on medium-high heat. Cook onion, garlic and a pinch of salt for 2-3 minutes, stirring regularly, until vegetables begin to soften. Add tomatoes, stock, water and lentils to pot. Bring to a simmer, cover with a lid and reduce heat to low. Cook for 5 minutes, remove lid and continue cooking for 10-15 minutes, stirring occasionally, until slightly thickened and lentils are tender.
  2. 2. While tomato sauce simmers, prepare smoky tomato chicken. Heat oil in a large fry-pan on medium-high heat. Pat chicken dry, rub with smoky tomato rub and season. Cook chicken for 2-3 minutes each side (depending on thickness), or until cooked through. Set aside, covered, to rest. Alternatively, cook on BBQ.
  3. While chicken is cooking, prepare balsamic tomato salad. Dice tomatoes 1cm; peel courgette into ribbons and thinly slice core; finely chop parsley; zest and juice lemon. Add all to a large bowl, along with all remaining ingredients. Toss well to combine and season to taste.
  4. Slice chicken thinly against the grain, reserving any resting juices. Add chicken resting juices to tomato sauce (if desired), stir and season to taste.
  5. TO SERVE spoon tomato sauce onto plates, top with smoky tomato chicken and serve balsamic tomato salad on the side. Squeeze over lemon wedges and garnish with basil leaves.
