10-Minute Sweet Chilli Chicken & Rice with Crispy Shallots

Sweet, spicy, saucy and crunchy! This superquick sweet chilli chicken has it all and can be enjoyed in just 10 minutes! Our healthy version of an indulgent Chinese classic is the perfect midweek meal for when your short on time and looking for something delicious.


Ingredients

Chicken

  • 1/2 tsp sesame oil
  • 300g diced free range chicken breast
  • 70g sweet chilli sauce

Rice

  • 1/2 pack precooked brown rice
  • 1 twin pack baby bok choy, thinly sliced
  • 100g julienned carrot
  • 1 Tbsp sesame oil
  • 1 Tbsp rice wine vinegar
  • 1/2 Tbsp soy sauce

To Serve

  • 50g mung bean sprouts
  • 1/2 pack crispy shallots

Steps

  1. Heat sesame oil in a frypan on medium-high heat. Pat chicken dry and add to pan with a pinch of salt. Cook for 6-8 minutes, tossing occasionally, until chicken is golden and cooked through. Add sweet chilli sauce to the pan and toss with chicken for 30 seconds, until coated. Add a splash of water if sauce becomes too thick. Season to taste with salt and pepper.
  2. Squeeze rice in pack to separate grains. Tear top and microwave in pack for 2 minutes. Meanwhile, thinly slice bok choy and add to a bowl with carrot. Once rice is cooked, add to bowl along with sesame oil, vinegar and soy sauce. Toss to combine and season to taste with salt and pepper.
  3. Spoon rice onto plates and top with sweet chilli chicken and mung beans. Sprinkle over crispy shallots.
