Ingredients
SMOKY TOMATO CHICKEN
- 140g lean chicken breast steak
- ¾ teaspoon smoky tomato rub
- Spray oil
- 150g tomato lentil sauce
- ¼ cup water
BALSAMIC TOMATO SALAD
- ½ punnet cherry tomatoes
- 1 courgette
- 1-2 tablespoons parsley leaves and stalks
- 1 handful baby silverbeet
- ¼-½ pack black olives
- 20g balsamic vinaigrette
TO SERVE
- ½ bag green beans
- 1-2 lemon wedges
- 1-2 tablespoons picked basil leaves

Preheat BBQ grill or hot plate to medium-high (if using). Bring a half full kettle to the boil. Heat a medium, dry fry-pan on medium-high heat. Pat chicken dry, season and rub with smoky tomato rub. Spray pan with oil and cook chicken for 2-3 minutes each side (depending on thickness), or until cooked through. Reserve pan. Set chicken aside in a bowl, covered, to rest. Alternatively, cook on BBQ.

While chicken is cooking, prepare balsamic tomato salad. Cut tomatoes into quarters; peel courgette into ribbons and thinly slice core; finely chop parsley; roughly chop silverbeet and olives. Add all to a bowl, along with vinaigrette. Toss well to combine and season to taste.

Once chicken is resting, add tomato lentil sauce and water to reserved pan and bring to a simmer on medium heat. Simmer for 1-2 minutes, until sauce is reduced and thickened.

Place beans in a small, heat-proof bowl and pour over boiling water. Leave to cook for 5 minutes then drain well and season.

Slice rested chicken thinly against the grain and toss through any resting juices, if desired.

TO SERVE spoon tomato lentil sauce onto a plate and top with slices of smoky tomato chicken. Serve balsamic tomato salad and green beans on the side. Squeeze over lemon wedges and garnish with basil leaves.
