Nadia's Minty Lamb Sausage Rolls with Super Green Salad

Inspired by Nadia's delicious minty lamb sausage rolls on Three's Nadia's Farm, this winner runs all month! Artisan pastry is filled with juicy lamb to form the most delish sausage roll. Served with beautiful spring greens and tomato chutney to finish.
Ingredients
Sausage Rolls
- 1 brown onion, finely diced
- 1/2 tsp thyme, roughly chopped
- 1 garlic clove, minced
- 25g mint sauce
- 300g lamb mince
- 1/4 tsp salt
- 25g panko breadcrumbs
- 250g flaky puff pastry
- 1 egg
- 1 tsp thyme
Spring Salad
- 1 baby cos lettuce, leaves separated
- 1 Lebanese cucumber, peeled into ribbons
- 50g rocket
- 1 Tbsp salsa verde
To Serve
- 50g tomato chutney

Preheat oven to 220°C (or 200°C fan bake).

Finely dice onion, roughly chop first measure of thyme and mince garlic. Add to a bowl along with mint sauce, lamb, salt measure and panko. Mix well to combine.

For S2 and S4, cut pastry in half lengthways and divide filling into two. Shape filling into a long sausage along centre of the pastry. Roll up pastry to form long sausage rolls. Cut each roll into even-sized pieces (S1 & S2: 4 pieces, S4: 8 pieces) and place on a lined oven tray, seam side down.

In a small bowl, whisk egg then brush over sausage rolls. Sprinkle second measure of thyme leaves over sausage rolls. Bake for 18-22 minutes, or until pastry is puffed and golden and lamb is cooked through.

Separate lettuce leaves and peel cucumber into ribbons. Toss in a bowl with rocket (S2 & S4 only) and salsa verde.

Divide sausage rolls and salad between plates and serve with tomato chutney.
