These recipes use the same amount of protein but are bulked out with hearty carbohydrates and veggies to make your dinner go further! Cheesy pasta bake is the ultimate family favourite. Tomato-based sauce with plenty of veggies, then layered with a creamy white sauce and finished in the oven with a sprinkling of Colby cheese for a golden cheesy crust. If you’re on a 2-person box, these recipes feed 4; on a 4-person box, they feed 8.
Ingredients
Pasta
- 1 1/2 pack pasta
- 1 drizzle of olive oil
Beef & Sauce
- 1 brown onion, finely diced
- 3 garlic clove, minced
- 2 carrot, grated
- 1 drizzle of oil
- 600g beef mince
- 2 pack veggie Italian herbs
- 1 tsp salt
- 120g tomato paste
- 2 can crushed tomatoes
- 2 1/2 cup beef stock
- 1 Tbsp soy sauce
- 150g baby spinach
Cheesy Topping
- 5 Tbsp butter
- 5 Tbsp flour
- 1/2 tsp salt
- 3 cup milk
- 250g Colby cheese, grated

Preheat oven to high grill. Set aside a baking dish. Boil a pot of salted water, then add pasta and cook for about 10 mins, until tender. Drain and return to pot with olive oil to prevent sticking.

Finely dice onion. Mince garlic. Grate carrot. Heat oil in a frypan on medium-high. Cook beef for about 7 mins, until browned. Add onion, garlic, carrot, measure of spices and first salt measure and cook for another 6 mins, until softened and fragrant.

Add tomato paste, canned tomatoes, stock and soy sauce to pan and bring to a simmer. Drop heat to medium and cook for about 6 mins, until thickened and reduced. Season to taste with salt and pepper. Transfer to baking dish, along with spinach and pasta. Mix to combine.

Heat butter in a pot on medium, until melted. Whisk in flour and second salt measure and cook, stirring constantly, for 1-2 mins, until golden and fragrant. Gradually whisk in milk, 1/2 cup at a time, until smooth. Bring to a gentle simmer and cook for 2-3 mins, until thickened. Stir frequently, ensuring it does not come to a boil to prevent sauce from splitting. Season to taste with salt. Grate cheese. Pour white sauce over pasta and sprinkle with cheese. Grill for about 5 min, until golden.
