Basil & Lime Falafel Burgers with Roasted Red Pepper Yoghurt

There's a new veggie burger in town! Create delicious vegetarian burger patties using premade basil and lime falafel mix before pan-frying for a golden crust with a soft centre. Serve with roasted red pepper yoghurt, tomato and a classic slaw for a truly must have burger.
Ingredients
Falafel Patties
- 2 carrot, grated
- 500g basil & lime falafel mix
- 1 drizzle of oil
Slaw
- 350g slaw
- 1 Tbsp vinegar
- 2 Tbsp mayonnaise
Roasted Red Pepper Yoghurt
- 100g yoghurt
- 100g romesco sauce
Burger Fillings
- 2 pack burger buns
- 2 tomato, sliced

Preheat oven to high grill. Grate carrot. Add to a bowl with falafel mix and mix well to combine. Divide and shape mixture into patties (S2: 3 patties, S4: 6 patties, S6: 9 patties) about 1cm thick. Heat oil in a frypan on medium. Cook patties (in batches if needed) for 4-5 mins each side, until golden brown and cooked through.

Combine all slaw ingredients in a bowl and mix well. Season to taste with salt and pepper.

Add yoghurt and romesco to a bowl and mix to combine.

Cut buns in half horizontally and place cut side up on an oven tray. Toast for about 2 mins, until golden. Take care not to burn buns. While buns toast, slice tomato.

Spread yoghurt on buns and top with slaw, tomato, falafel patties and bun top. Serve any extra slaw on the side.
