With ranch slaw and avocado corn salsa
Ingredients
RANCH SLAW
- 75g yoghurt
- ½ bag ranch slaw
- 1 tablespoon coriander, finely chopped
- 25g BBQ sauce
- Zest and juice of ¼ lemon
- ¼ teaspoon honey (optional)
BBQ PORK
- 1 teaspoon oil, for cooking (or use spray oil)
- 275g lean pork sirloin steaks (at room temperature)
- 25g BBQ sauce
AVOCADO CORN SALSA
- ½ corn cob
- ½ can black beans
- ¼ avocado
- 1 tomato
- ½ capsicum
- 1/8 red onion
- Zest and juice of ¼ lemon
- ¼ teaspoon salt
- ½ teaspoon vinegar (e.g red wine, white wine cider)

Preheat BBQ hot plate or grill to medium-high (if using). Bring a half kettle to the boil. Prepare lemon and coriander. In a medium bowl, combine all ranch slaw ingredients, season to taste and set aside.

Heat oil in a medium fry-pan on medium-high heat. Pat pork dry and season. Cook pork for 3-4 minutes on one side, then turn and continue to cook for about 3 minutes. After 3 minutes, remove pan from heat and add BBQ sauce. Turn pork in sauce to glaze. Alternatively, cook on BBQ and brush BBQ sauce over pork in the last minute to glaze. Remove pork and sauce and set aside, covered, to rest before slicing thinly against the grain, reserving any resting juices.

While pork cooks, remove kernels from corn cob. Place kernels in a small, heat-proof bowl, cover with boiling water and allow to cook for 4-5 minutes, until bright yellow and tender. Drain, rinse under cold water and leave to drain well.

Rinse and drain black beans; dice avocado, tomato and capsicum 1cm; finely dice red onion.

Place all avocado corn salsa ingredients in a medium bowl. Mix well and season to taste with salt (if needed) and pepper.

TO SERVE divide ranch slaw between bowls. Top with BBQ pork, drizzle over resting juices and top with avocado corn salsa.
