Satisfy your cravings with these mouthwatering cheesy wedges. Full of Mexican-inspired flavours, featuring crispy seasoned wedges topped with chicken, beans, melted cheese and a creamy dollop of sour cream for a tangy finish!
Ingredients
Wedges
- 400g potatoes, cut into wedges
- 1/4 pack taco 'bout flavour Mexican spices
- 1 drizzle of oil
Beans
- 1 carrot, grated
- 1/2 can kidney beans, drained & rinsed
- 1 drizzle of oil
- 1/4 pack taco 'bout flavour Mexican spices
- 1 pinch of chilli flakes
- 1/4 cup beef stock
- 1/2 can crushed tomatoes
Chicken
- 300g free range chicken breast, cut into steaks
- 1 drizzle of oil
To Serve
- 1 tomato, chopped
- 25g Colby cheese, grated
- 2 Tbsp sour cream
- 1 Tbsp sweet chilli sauce

Preheat oven to 230°C (or 210°C fan bake). Cut potatoes into wedges. Toss on 1-2 lined oven trays with first measure of spices and oil. Season with salt and pepper. Roast for about 25 mins, until golden and tender.

Meanwhile, grate carrot. Drain and rinse beans. Pat chicken dry and cut into steaks by placing your hand flat on top of chicken and slicing through horizontally. Season with salt and pepper. Heat oil in a frypan on medium-high. Cook chicken for 3-5 mins each side (depending on thickness), or until cooked through. Set aside to rest and save pan.

Return pan to heat with oil. Cook carrot, second measure of spices and chilli flakes for about 3 mins, until soft. Add stock, beans and canned tomatoes. Bring to a simmer and cook for about 5 mins, until thickened and reduced. Season to taste with salt and pepper.

Chop tomato. Grate cheese. Roughly chop cooked chicken. When wedges are cooked, remove from oven. Top with beans, chicken, tomato and cheese. Return tray to oven for about 3 mins, until cheese is melted.

Portion wedges topped with sour cream and sweet chilli sauce. Enjoy!
