Spiced Lamb Pitas with Mint Yoghurt

The purpose of rubbing the base of the pan is to make sure you get all that delicious, caramelised browning flavours into the mixture.
Ingredients
Spiced Lamb
- 600g lamb mince
- 2 tablespoons lamb spices
- 1 brown onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons finely grated ginger
- ½ teaspoon salt
- 1 cup chicken stock
Pitas
- 8 wholemeal pita breads
Mint Yoghurt
- 150g yoghurt
- 2-3 tablespoons mint leaves
- Zest and juice of ½ lime
- ½ teaspoon honey
To Serve
- ½ cos lettuce
- 2 tomatoes
- 2 carrots
- ½ lime

Preheat oven to 180°C. Line an oven tray with baking paper. Prepare onion and garlic. Heat a drizzle of oil in a large fry-pan on high heat and cook lamb mince for about 5 minutes, breaking up with a wooden spoon as it cooks, until browned. Add lamb spices and cook for 1-2 minutes, until fragrant. Set lamb aside in a bowl and return pan to medium-high heat with a drizzle of oil.

Cook onion for 3-4 minutes, until softened. Add garlic, ginger and salt. Cook for 1-2 minutes, until fragrant. Return lamb mince to pan, along with stock then rub the base of the pan to release any pan brownings. Allow to simmer for about 5 minutes. Season to taste.

While spiced lamb cooks, place pitas on prepared tray and bake in oven for about 8 minutes, until warmed through.

Finely chop mint. Combine all mint yoghurt ingredients together in a small bowl and season.

Finely shred lettuce; thinly slice tomatoes; grate carrots; cut remaining lime into wedges. Place on a large serving plate or platter.

To serve, place everything in the middle of the table and fill pitas to suit everyone’s own taste buds! Use lime wedges for squeezing.
