Okinawan Soba Noodle Salad

Ingredients
SOY MARINATED FISH
- 600g fish fillets
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- ¼ teaspoon salt
- 1 pack sesame seeds
- 3-4 teaspoons oil, for cooking (or use spray oil)
OKINAWAN SOBA NOODLE SALAD
- 2 bundles soba noodles
- 1½ cups edamame beans
- 2 carrots, grated
- 1 capsicum, very thinly sliced
- ¼-½ red onion, very thinly sliced
- 1 teaspoon finely grated ginger
- 1 teaspoon sesame oil
- 2-3 tablespoons coriander leaves and stalks, finely chopped
- 50g mung bean sprouts
- 50g miso orange vinaigrette
- 1 teaspoon rice wine vinegar
TO SERVE
- 50g mung bean sprouts
Steps

Bring a medium pot of salted water to the boil. Prepare salad vegetables. Pat fish dry and remove any remaining scales or bones. Cut any larger fillets in half and place in a medium bowl with garlic, soy sauce, salt and sesame seeds. Leave to marinate.

Add soba noodles to pot of boiling water, stir to separate and cook for about 2 minutes. After 2 minutes, add edamame beans and continue to cook on high heat for 1-2 minutes, until edamame beans are bright green and soba noodles are tender. Drain, rinse under cold water and leave to drain well.

While soba noodles cook, add all remaining salad ingredients to a bowl. Once noodles and beans are cooked, add to bowl and toss to combine.

Heat oil in a large fry-pan (preferably non-stick) on medium-high heat. Cook fish, in batches, for 1-2 minutes each side (depending on thickness), or until just cooked through. Set aside, covered, to rest and keep warm. Season to taste. Reserve any resting juices.

Pour fish resting juices into Okinawan soba noodle salad, toss well to combine and season to taste.

TO SERVE divide Okinawan soba noodle salad between bowls. Top with soy marinated fish and place mung bean sprouts on top.
