Jumbo Pulled Beef Sliders with Roasties

Be sure to evaporate as much liquid as possible from the pulled beef mix to avoid your slider buns becoming sloppy joes!
Ingredients
Roasties
- 200g potatoes, scrubbed and diced 2cm
- 1 carrot, quartered lengthways and cut into 5cm-long sticks
Jumbo Pulled Beef Sliders
- ½ brown onion, thinly sliced
- 1 tablespoon slider spice mix
- ¼ cup beef stock
- 1½ teaspoons Worchestershire sauce
- 250g pulled beef
- 5 slider buns
Salad
- ½ telegraph cucumber
- 1 tomato
- 1-2 spring onions
- ½ cos lettuce
- ¼ cup mayonnaise
- 1 tablespoon BBQ sauce (optional)

Preheat oven to 220°C. Line an oven tray with baking paper. Toss potatoes and carrot on prepared tray with a drizzle of oil and season. Roast (on top rack of oven) for about 25 minutes, until golden and tender. While roasties cook, heat a drizzle of oil in a medium fry-pan on medium-high heat.

Cook onion for 2-3 minutes, until softened. Add slider spice mix and cook for about 30 seconds, until fragrant. Reduce heat to medium.

Add stock, Worcestershire sauce and pulled beef, and cook a further 1-2 minutes, until stock has evaporated. Remove from heat, season with salt and cover to keep warm.

While pulled beef cooks, thinly slice cucumber, tomato and spring onions and shred lettuce. In a small bowl, mix together mayonnaise and BBQ sauce (if using). Set all aside separately.

Slice slider buns in half horizontally. When potatoes have 5 minutes cook time remaining, remove tray from oven, move roasties to one side and place buns, closed, on other side. Toast for about 5 minutes, until warmed through.

To serve, fill slider buns with pulled beef and salad. Drizzle with mayonnaise and serve on plates with roasties. Serve any extra salad on the side with a drizzle of olive oil, if desired.
