Asian BBQ Beef Meatballs with Rice and Slaw

An easy asian style meal!
Ingredients
Rice
- 1 bag jasmine rice
- 2¼ cups boiling water
Asian slaw
- 1 pack snow peas
- 1 bag Asian slaw
- ½ tablespoon sesame oil
- 2 tablespoon mayonnaise
- 1 teaspoon soy sauce
- Drizzle rice wine vinegar
Asian BBQ Beef Meatballs
- 1 pack Asian beef meatballs
- 1 pottle Asian BBQ sauce
- ¼ cup water
To Serve
- 1 sachet sesame seeds

Bring a full kettle to the boil. Combine rice, boiling water and a pinch of salt in a medium pot and bring to the boil with the lid on. As soon as it boils, reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 5 minutes. Do not lift lid during cooking.

Thinly slice snow peas and add to a medium bowl with remaining Asian slaw ingredients. Toss to combine and set aside.

Heat a drizzle of oil in a large fry-pan on medium heat. Cook beef meatballs for about 6 minutes, until golden and nearly cooked through. Turn often to ensure even cooking. Add Asian BBQ sauce and water to pan. Cook for about 2 minutes until sauce thickens.

To serve, spoon ¾ cup cooked rice into each bowl and top with Asian BBQ beef meatballs and Asian slaw. Sprinkle over sesame seeds.
