Top Notch Seared Beef Rump Steaks with Hand Cut Chips & Hollandaise

What takes this beef rump steak dish to the next level is our Hollandaise sauce. Creamy and slightly tangy, it’s the perfect accompaniment to juicy tender rump steak. Served with a bright and zesty side of lemony greens and roasted hand cut chips – get ready for a treat!


Ingredients

Chips

  • 800g potatoes, cut into chips
  • 1 drizzle of oil

Greens

  • 1 broccoli, cut into small florets
  • 1 drizzle of oil
  • 100g baby spinach
  • 1 lemon, zested & juiced

Beef

  • 1 drizzle of oil
  • 600g beef rump steaks
  • 2 Tbsp butter

To Serve

  • 100g Hollandaise sauce

Steps

  1. Preheat oven to 220°C (or 200°C fan bake). Cut potatoes into chips. Toss on a lined oven tray with oil. Season with salt and pepper and bake on upper rack for 25-30 mins, until tender and golden.
  2. Cut broccoli into small florets. Toss with oil on a foil-lined oven tray and season with salt and pepper. Set aside for later.
  3. Heat oil in a frypan on medium-high. Pat beef dry and season with salt and pepper. Cook beef, in batches if needed, for 3-4 mins on one side, until browned. Flip and add butter to pan. Want a more flavourful steak? Tilt pan, scoop some butter with a spoon and drizzle it back over the steak to infuse it with the butter. Cook for 3-4 more mins for medium-rare, (depending on thickness), or until cooked to your liking. Rest, covered.
  4. When chips have 10 mins remaining, transfer to lower oven rack. Switch oven to high grill. Cook broccoli on upper oven rack (above potatoes) for 5-8 mins, until tender. Toss broccoli with spinach in a bowl. Zest and juice lemon into bowl with greens. Season with salt and pepper. Thinly slice beef.
  5. Plate up beef, greens and chips. Smother with Hollandaise sauce and dig in!
