15-Minute Sicilian-Style Lamb & Cheesy Dippers

With minimal effort, you can savour the taste of Sicily in the comfort of your own home. With just 15 minutes of cooking, you can dig into this comforting lamb dish rich with tomato and Sicilian pesto. Accompanied with Parmesan grilled bread, it's the perfect choice for a quick, easy yet gourmet meal on those busy evenings.


Ingredients

Sicilian-Style Lamb

  • 1 drizzle of oil
  • 1 carrot, grated
  • 600g lamb mince
  • 1 pack Italian spice blend
  • 2 tsp cornflour
  • 1 cup beef stock
  • 1 can cherry tomatoes
  • 100g baby spinach
  • 100g Sicilian pesto

Salad

  • 200g julienned beetroot
  • 100g baby leaf lettuce
  • 1 Tbsp balsamic vinegar

Cheesy Dippers

  • 350g Vienna loaf
  • 2 Tbsp butter
  • 50g grated Parmesan

Steps

  1. Preheat oven to high grill.
  2. Heat oil in a frypan on high heat. Grate carrot. Add to pan and cook for 2 minutes, until tender. Add lamb, measure of spices, cornflour and a pinch of salt and cook for about 3 minutes, breaking up lamb as it cooks, until browned.
  3. Add stock and canned tomatoes to pan and bring to a simmer. Reduce heat to medium and simmer for 5-8 minutes stirring occasionally, until thickened. Remove from heat and stir through spinach and Sicilian pesto. Season to taste with salt and pepper.
  4. Toss salad ingredients in a bowl. Season to taste with salt and pepper and set aside for serving.
  5. Cut Vienna loaf in half horizontally. Spread butter equally between both sides and sprinkle with Parmesan. Place on an oven tray and grill for 3-4 minutes or until golden.
  6. Spoon lamb into bowls and serve with bread and salad on the side.
