Cheesy Nachos with Sour Cream

Adults could add some chilli flakes or chilli oil to spice things up.
Ingredients
Cheesy Nachos
- 1 brown onion, finely diced
- 1 carrot, grated
- 1 cup frozen corn
- 1½ tablespoons Mexican spice mix
- ½ teaspoon salt
- 1 can mild chilli beans
- 1 can chopped tomatoes
- ½ cup grated cheese
Guacamole
- 1 avocado
- Juice of ½ lemon
To Serve
- 1 bag corn chips
- ½ cup sour cream

Preheat oven grill to high. Prepare vegetables.Heat a drizzle of oil in a large, oven-proof fry-pan on medium heat. Cook onion and carrot for 3–4 minutes, until starting to soften. Add corn and cook a further 1-2 minutes, until vegetables are soft (add a splash of water if vegetables start to stick).

Stir in Mexican spice mix, salt, chilli beans and canned tomatoes and simmer for about 5 minutes, until sauce has thickened slightly. Season to taste. Sprinkle over cheese and place under grill for 1-2 minutes, until cheese has melted.

While sauce simmers, cut avocado in half lengthways and twist halves to separate. Remove stone using a spoon and scoop out flesh. Place flesh into a small bowl, add lemon juice and mash using a fork. Season to taste.

To serve, place a handful of corn chips into each bowl and spoon over cheesy nachos. Top with a dollop of guacamole and sour cream.
