Beef Dan Dan Noodles with Peanut & Sesame Seeds

Rich New Zealand beef and mushrooms meld marvelously with a tangy peanut sauce, topped with sesame seeds and served with delicious greens!


Ingredients

Beef

  • 100g mushrooms, grated
  • 1 tsp chilli oil
  • 125g lean beef mince
  • 1/4 pack Chinese spices

Sauce

  • 1/2 garlic clove, minced
  • 1 tsp smooth peanut butter
  • 1/4 pack sesame seeds
  • 1 tsp soy sauce
  • 1 tsp rice wine vinegar
  • 2 Tbsp water

Greens & Noodles

  • 1/2 broccoli, cut into small florets
  • 1/4 pack soba noodles
  • 1/4 tsp sesame oil

To Serve

  • 1 radish, grated

Steps

  1. Bring a pot of salted water to the boil.
  2. Grate mushrooms. Heat chilli oil in a frypan on high heat. Add mushrooms, beef and measure of spices. Cook for about 5 minutes, breaking up beef with a wooden spoon as it cooks.
  3. Mince garlic and place in a bowl with remaining sauce ingredients. Whisk well to combine. When beef is cooked, remove from heat and add sauce to pan. Stir and season to taste with soy sauce. Keep warm.
  4. Cut broccoli into small florets and separate bok choy leaves (S2 & S4 only). Grate radish and set aside separately.
  5. Add broccoli and noodles to pot of boiling salted water and cook for 3-4 minutes, until both are tender. Add bok choy (S2 & S4 only) and drain immediately. Return to pot and stir through sesame oil. Season to taste with salt and keep warm.
  6. Top noodles and greens with beef and radish.
