Pork and Apple Sausages with Pappardelle Pasta

Ingredients

Pork and Apple Sausages with Pappardelle Pasta

  • 550g pork and fennel sausages
  • 1 brown onion, finely diced
  • 1 apple, finely diced
  • 1/3 cup white wine or chicken stock
  • 1 courgette, diced 1cm
  • ½ teaspoon salt
  • 1 can chopped tomatoes
  • 1 tub tomato paste (reserve 2 teaspoons)
  • 1 cup chicken stock
  • 360-400g dried pappardelle pasta
  • 1 head broccoli, cut into small florets
  • ½ cup sour cream
  • reserved tomato paste

Steps

  1. Bring a large pot of salted water to the boil. Heat a drizzle of oil in a large fry-pan on medium heat. Brown sausages all over for 2-3 minutes (you do not need to cook them all the way through). Set aside for 5 minutes, then slice 1cm. Keep sausage oils in pan and pan on heat.
  2. Add onion and apple to pan and cook for 4-5 minutes, until soft. Add wine/first measure of stock, and rub base of pan with a wooden spoon, to release pan brownings.
  3. Add courgette, salt, tomatoes, tomato paste, second measure of stock and sliced sausages. Simmer for 8-10, minutes until sauce has thickened, stirring occasionally. Season to taste with salt and pepper.
  4. While sauce is cooking, cook pasta in large pot of boiling water for about 10 minutes, until just tender. Add broccoli to pot with pasta for the last 1-2 minutes of cook time. Drain and drizzle with a little olive oil to prevent sticking together.
  5. In a small bowl mix, sour cream with 2 teaspoons tomato paste until smooth.
  6. To serve, divide pasta and broccoli between serving bowls. Spoon over pork and apple sausages and top with a dollop with tomato sour cream.
