Hopefully the weather is warm enough to crank up the BBQ tonight. Cook beef on BBQ grill for about 2 minutes each side for medium (depending on thickness), or until cooked to your liking.
Ingredients
Polenta Fries
- 400g potatoes, scrubbed and cut into 1.5cm-thick fries
- 40g polenta mix
BBQ Beef Steaks
- 300g beef pave steaks (at room temperature)
- 1 tablespoon BBQ sauce
Crunchy Salad
- 1 teaspoon mustard (e.g. Dijon, wholegrain)
- 1 teaspoon sweet chilli sauce
- 1 teaspoon olive oil
- ½ cos lettuce
- 1 carrot
- 1 courgette
BBQ Mayonnaise
- 1-2 tablespoons mayonnaise
- Remaining BBQ sauce
Steps
-
Preheat oven to 220°C. Line an oven tray with baking paper. Preheat BBQ grill or hot plate to high (if using). Place potatoes and polenta mix into a large bowl with a drizzle of olive oil and toss well to coat. Season with salt and pepper and lay in a single layer on prepared tray. Bake for about 25 minutes, until golden and tender. Turn once during cooking.
-
While potatoes cook, pat beef dry with paper towels then toss in a shallow bowl with first measure of BBQ sauce. Season with salt and pepper and set aside.
-
In a medium bowl, whisk mustard, sweet chilli sauce and olive oil. Roughly chop lettuce and peel carrot and courgette into long, thin ribbons. Add veggies to bowl with dressing. In a small bowl, mix mayonnaise and BBQ sauce until combined. Set aside.
-
When fries have 10 minutes cook time remaining, heat a drizzle of oil in a medium fry-pan on high heat. Cook beef for about 2 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered, to rest for about 5 minutes before slicing thickly against the grain.
-
While beef rests, toss crunchy salad with dressing and season to taste.
-
To serve, load polenta fries and slices of BBQ beef steaks onto plates. Drizzle with BBQ mayonnaise and serve crunchy salad on the side.
