Teriyaki Tofu Donburi Bowl

Say goodbye to boring tofu and jazz it up with this sweet and savoury teriyaki sauce. The tofu becomes golden and crispy when fried, paired with fresh cucumber, edamame, creamy avocado and sesame mayo, you’ll have the flavours of Japan in one bite! !
Ingredients
Rice
- 300g short grain rice
- 2 1/4 cup boiling water
Tofu
- 600g tofu, diced 2cm
- 2 Tbsp cornflour
- 1 drizzle of oil
- 150g teriyaki sauce
Toppings
- 1 pack edamame beans
- 1 telegraph cucumber, cut in half lengthways & thinly sliced
- 1 avocado, thinly sliced
Sesame Mayo (optional)
- 2 Tbsp mayonnaise
- 1 tsp sesame oil
Steps

Boil a kettle. Boil a pot of water for edamame. Combine rice, boiling water measure and a pinch of salt in a pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 mins. Turn off heat and steam, covered, for 5 more mins. Do not lift lid during cooking.

Pat tofu dry and dice 2cm. Place in a bowl and gently toss with cornflour, until well coated. Season lightly with salt and pepper. Heat oil in a frypan on high heat and cook tofu for 8-10 mins, turning often, until golden. Add teriyaki sauce and cook for about 2 mins, until sauce has reduced slightly and become sticky.

Place edamame in pot of boiling water. Return to the boil and cook for 5 mins. Drain and season with salt.

Cut cucumber in half lengthways and thinly slice. Thinly slice avocado. In a bowl, mix mayo and sesame oil.

Top rice with edamame, tofu, cucumber, avocado and a dollop of sesame mayo (if using). Dig in!
