
Teriyaki Beef Stir-Fry

Ingredients
Jasmine Rice
- 1 cup jasmine rice
- 1½ cups water
Teriyaki Sauce
- 1½ tablespoons soy sauce
- 1 tablespoon brown sugar
- ¼ cup water
- ½ tablespoon sesame oil
- ½ tablespoon rice wine vinegar
- 1 teaspoon freshly grated ginger
- ½ tablespoon cornflour
- Pinch of chilli flakes (optional)
Beef Stir-Fry
- 300g beef sirloin steaks (at room temperature)
- ¼ red onion
- ½ capsicum, core and seeds removed
- ½ head broccoli
- 1 carrot

Combine rice, water and a pinch of salt in a small pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

While rice cooks, combine all teriyaki sauce ingredients in a shallow bowl. Pat beef dry with paper towels and place in bowl with sauce to marinate for at least 5 minutes.

While beef marinates, prepare stir-fry veggies. Thinly slice red onion and capsicum; cut broccoli into small florets; peel carrot, cut in half lengthways and thinly slice. Set aside.

Heat a drizzle of oil in a medium fry-pan on high heat. Cook beef (reserving marinade) for about 1 minute each side, until browned but not cooked through. Set aside to rest before thinly slicing. Return pan to high heat with a drizzle of oil.

Stir-fry onion, capsicum, broccoli and carrot for about 2 minutes, until tender but still crunchy. Add sliced beef (including any resting juices) and reserved teriyaki sauce and toss for 1-2 minutes, until sauce is thick and beef is cooked to your liking.

To serve, place ¾ cup cooked jasmine rice into each bowl and top with plenty of teriyaki beef stir-fry.
