Ingredients
SOFT BEEF TACOS
- 10 wheatmeal tortilla wraps
- 1 brown onion, finely diced
- 2 teaspoons taco spice mix
- 450g beef mince
- 1 carrot, grated
- 1 can chopped tomatoes
- ½ cup stock (e.g. beef, chicken or vegetable)
- ½ teaspoon balsamic vinegar
- ¼ teaspoon salt
- ½ teaspoon sugar
CHIPOTLE YOGHURT DRIZZLE
- 150g natural yoghurt
- 1-2 teaspoons chipotle sauce (optional, adults)
TO SERVE
- ½ cos lettuce
- 1 tomato
- 1 cup grated Edam cheese

oven to 180°C.

Wrap tortillas in foil and warm in oven for 15 minutes. While tortillas warm, prepare the rest of the meal.

Heat a drizzle of olive oil in a large fry-pan on medium-high heat. Cook onion for 3-4 minutes, until softened. Add taco spice mix, beef mince and carrot. Cook for 3-4 minutes, breaking up mince with a wooden spoon, until meat is browned and cooked through.

Add canned tomatoes, stock, balsamic vinegar, salt and sugar. Simmer, stirring occasionally, for 5-8 minutes, until sauce has thickened. Season with salt and pepper.

While sauce is simmering, thinly slice lettuce and dice tomato 1cm.

In a small bowl, combine all chipotle yoghurt ingredients (if using).

divide warmed tortillas between plates and fill with beef mince, grated cheese, lettuce, tomato and drizzle with chipotle yoghurt (or plain yoghurt). Roll up and enjoy.
