Chunky Tomato Fish Chowder with Basil Pesto Rolls

A great winter warmer full of goodness and flavour!


Ingredients

CHUNKY TOMATO FISH CHOWDER

  • 1 brown onion, finely diced
  • 2 cloves garlic, minced
  • 1 carrot, diced 1cm
  • 2 sticks celery, diced 1cm
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 4 tablespoons fish chowder spices
  • 2 tablespoons flour
  • 2 tomatoes, roughly chopped
  • 1 cup chicken stock
  • 1 cup milk
  • 1 cup water
  • 400g potatoes, scrubbed and diced 1cm
  • 600g fish fillets

TO SERVE

  • 6 basil pesto garlic butter rolls
  • 2-3 tablespoons roughly chopped parsley leaves and stalks
  • 2 pinches of chilli flakes (optional, adults)

Steps

  1. oven to 180°C. Line an oven tray with baking paper.
  2. Heat a drizzle of oil in a large pot on medium heat. Cook onions for about 3 minutes, until softened. Add garlic, carrot, celery and salt and cook for a further 1-2 minutes. Add butter and fish chowder spices and cook for about 2 minutes, until fragrant.
  3. Stir through flour and tomatoes then slowly add stock, milk and water, stirring constantly. Add potatoes, bring to a gentle simmer, reduce heat to low and cover. Cook for about 12 minutes, stirring regularly, until potatoes are tender.
  4. While chowder is simmering, pat fish dry with paper towels and remove any remining scales or bones. Dice 2cm and set aside.
  5. Once potatoes are tender, add fish to chowder and cook for a further 5-6 minutes (depending on thickness), until fish is cooked through. Season to taste with salt and pepper.
  6. While fish cooks, place bread rolls on prepared tray and bake for 6-8 minutes, until crunchy and heated through.
  7. spoon chunky tomato fish chowder into bowls and sprinkle with parsley and chilli flakes (if using). Serve basil pesto rolls on the side.
