Teriyaki Pulled Beef and Soba Noodle Bowls

Ingredients
SOBA NOODLES
- ¾ pack soba noodles, binding removed
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
TERIYAKI PULLED BEEF
- 1 baby bok choy, end trimmed, leaves separated and sliced in half lengthways
- ½ bunch broccolini, sliced in half lengthways
- 1 pack pulled beef
- 1 pottle teriyaki sauce
- ½ cup water
- 2 carrots, peeled into long thin ribbons
TO SERVE
- 2 spring onions
- 1 sachet sesame seeds

a full kettle to the boil.

Pour boiling water and a pinch of salt into a medium pot and bring to the boil. Once boiling, add soba noodles and cook for about 4 minutes, until tender. Drain well, return to pot and toss with sesame oil and soy sauce. Set aside.

Heat a drizzle of oil in a large fry-pan on medium-high heat. Add bok choy and broccolini and stirfry for about 1 minute.

Add pulled beef, teriyaki sauce and water. Cook for about 4 minutes, gently breaking up the beef with a wooden spoon as it cooks, until heated through and sauce has thickened.

Add carrot ribbons to the pan, toss to combine and remove from the heat.

While teriyaki pulled beef cooks, thinly slice spring onions and set aside.

divide soba noodles between bowls and top with teriyaki pulled beef and a sprinkle of spring onions and sesame seeds.
