
Cajun Chicken Pizzas with Apricot Sauce and Slaw

Ingredients
CAJUN CHICKEN PIZZAS WITH APRICOT SAUCE
- 300g chicken thighs
- 2 teaspoons Cajun spice mix
- 3 wholewheat pizza bases
- 140g pizza sauce
- 2 cups grated Colby cheese
- 1 courgette, diced 1cm
- 1 tomato, diced 1cm
- 100g feta cheese
- 60g apricot sauce
SALAD
- ¼ teaspoon mustard (e.g. Dijon, wholegrain)
- 2 teaspoons mayonnaise
- 1 teaspoon vinegar (e.g. red wine, white wine)
- ½ iceberg lettuce
- ½ telegraph cucumber

oven to 220°C. Preheat two oven trays (or pizza stones if you have them).

Pat chicken dry with paper towels and cut into 1cm-thick strips. Sprinkle chicken with Cajun spice mix and toss to coat. Heat a drizzle of oil in a medium fry-pan on medium-high heat and cook chicken for about 1 minute each side, until golden (but not cooked through). Remove from pan and set aside.

Lay two sheets of baking paper on bench. Cut one pizza base in half. Place one and a half bases on each sheet of baking paper. Evenly spread pizza sauce over each base. Sprinkle over grated cheese and top with chicken, courgette and tomato. Crumble over feta cheese.

Carefully lift baking paper (with pizzas on top) and place onto preheated tray (or stones) then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for 12-14 minutes, until bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking.

In a medium bowl mix mustard, mayonnaise and vinegar together. Thinly slice lettuce and dice cucumber 1cm. Add both to bowl with dressing, toss to combine and season to taste. Dollop apricot sauce over cooked pizzas and season with salt and pepper.

cut Cajun chicken pizzas into 6-8 wedges and serve a few pieces per person. Serve salad on the side.
