Turkey Burgers with Cranberry Jam and Brie

Ingredients
TURKEY BURGERS AND BRIE
- 1 pack burger buns
- 1 round brie cheese
- 1 pack turkey patties
- ½ iceberg lettuce
- 1 tomato
- 2 carrots
- ¼ cup mayonnaise
- Drizzle of olive oil
- Drizzle of vinegar (e.g. red wine, white wine, cider)
TO SERVE
- ½-1 pottle cranberry jam

oven to 200°C. Line an oven tray with baking paper.

Slice burger buns in half horizontally and place, closed, on prepared tray. Set aside. Slice brie into 0.5cm-thick slices and set aside.

Heat a drizzle of oil in a large fry-pan (with lid) on medium-high heat. Use your thumb to make a small indent into the centre of each patty. Cook turkey patties for 3-4 minutes each side, until golden and cooked through. If patties start to colour too quickly, reduce heat.

Remove pan from heat and place a slice of brie on top of each patty. Leave, covered, to rest in pan, so cheese melts slightly. While patties are cooking, toast burger buns in oven for 3-4 minutes, until lightly toasted.

Roughly chop lettuce leaves into bun-sized pieces; thinly slice tomato; grate carrots. Set aside on a large plate or platter.

To build turkey burgers place a turkey pattie on bottom bun, top with some cranberry jam, lettuce, tomato and carrot. Spread mayonnaise on the underside of the top bun and place on top. Add all remaining veggies to a medium bowl and toss salad with a drizzle of olive oil and vinegar.
