Creamy Chicken with Mashed Potatoes

A comforting and creamy chicken dish that’s sure to warm little foodies’ bellies.
Ingredients
MASHED POTATOES
- 600g potatoes, peeled and diced 2cm
- 250g frozen peas
- 3 tablespoons milk
- 1 tablespoon butter
CREAMY CHICKEN
- 1 brown onion
- 2 carrots
- 2 stalks celery
- 550g chicken breasts
- 2½ teaspoons creamy chicken spice mix
- 1 teaspoon salt
- 2½ cups water
- 1½ tablespoons cornflour mixed with 1½ tablespoons water
- ¼ teaspoon runny honey
- ¼ cup sour cream
- ¼ teaspoon white pepper (optional, adults)

a large pot of salted water to the boil.

Cook potatoes in pot of boiling water for 12-15 minutes, until tender. Add peas for the last 3 minutes of cook time. Drain, return veggies to pot, along with milk and butter and mash until smooth. Season to taste with salt and pepper and set aside, covered, to keep warm.

While the potatoes cook, dice onion, carrots and celery 1cm. Pat chicken dry with paper towels and dice 2cm. Heat a drizzle of oil in a large pot on a mediumhigh heat and cook onion, carrot and celery for about 4 minutes, until starting to soften.

Add chicken, creamy chicken spice mix and salt to pot and cook for a further 3 minutes, until chicken has browned on the outside and spices are fragrant (chicken does not need to be cooked through yet).

Add water and bring to a boil. Once boiling, reduce to a simmer and cook for 3-4 minutes, until vegetables are just tender and chicken is cooked though.

Add cornflour mixture, stir to combine and cook a further 1-2 minutes, until thickened slightly. Add honey, sour cream and white pepper (if using). Season with black pepper, if desired and stir to combine.

divide mashed potatoes between bowls and top with creamy chicken.
