Pulled Lamb Pizza with Tzatziki and Baby Spinach Salad

Tzatziki is the finishing touch on this pulled lamb pizza.
Ingredients
PULLED LAMB PIZZA
- 2 teaspoons butter (optional)
- ¾ red onion, finely sliced
- 1 clove garlic, minced
- ½ teaspoon brown sugar
- 1 teaspoon balsamic vinegar
- 250g pulled lamb
- Juice of ½ lemon (reserve zest)
- 1 tablespoon chopped mint leaves
- 1 wholemeal pizza base
- 30-50g feta cheese
- Zest of ½ lemon
- ½-1½ teaspoons sumac
TZATZIKI
- ½ Lebanese cucumber
- Pinch of salt
- ¼ cup natural yoghurt
- ½ tablespoon chopped mint leaves
BABY SPINACH SALAD
- ½ avocado
- ½ bag baby spinach leaves
- 1 tablespoon sliced almonds
- 1 teaspoon balsamic vinegar

oven to 220°C. Preheat an oven tray (or a pizza stone if you have one).

Heat butter (if using) and a drizzle of oil in a medium frypan on low-medium heat. Cook onion and garlic for 4-5 minutes, stirring occasionally, until soft and starting to caramelise. Grate cucumber and mix with salt. Place in a strainer over a bowl and leave to sit, to draw out liquid.

Add sugar and vinegar to pan with onions and cook, stirring, for 30 seconds. Add lamb and cook for 2-3 minutes, breaking up with a wooden spoon as it warms, until warmed through. Remove from heat, add lemon juice and first measure of mint. Stir to combine and season to taste with salt and pepper.

Place a sheet of baking paper on bench and place pizza base on top. Spread lamb mixture evenly over base. Evenly crumble feta cheese across pizza. Lift baking paper, with pizza on top, onto preheated tray and cook for 8-10 minutes, until the base is crisp and golden around the edges.

While pizza cooks, prepare tzatziki and salad. Place yoghurt and second measure of mint in a small bowl. Squeeze excess liquid from cucumber, add to bowl and mix to combine. Set aside. Thinly slice avocado lengthways and add to a medium bowl with spinach, almonds, balsamic vinegar and a drizzle of olive oil.

Season baby spinach salad to taste with salt and pepper and mix well. When pizza is cooked, remove from oven and sprinkle with reserved lemon zest. Immediately before serving, drizzle over tzatziki and sprinkle with sumac to taste.

cut pulled lamb pizza into 6-8 pieces and divide between plates. Serve baby spinach salad and any extra tzatziki on the side.
