Beef and Tomato Wraps with Slaw

These spiced beef wraps are fast and delicious.
Ingredients
BEEF
- 300g beef, paprika and red wine grind
- ½ brown onion, finely sliced
- 1 tablespoon beef spice blend
- Zest of ¼ lemon
- 1½ teaspoons Worcestershire sauce
- ¼ cup beef stock
- 1½ teaspoons tomato sauce
TOMATOES
- 1 tomato
- ½ teaspoon vinegar (e.g. white wine, red wine, cider)
SLAW
- ½ cos lettuce
- 1 carrot
- 1-2 tablespoons mayonnaise
- Juice of ¼ lemon
- ½-1 teaspoon sweet chilli sauce (optional)
TO SERVE
- 6 tortilla wraps

oven to 200°C.

Using clean hands, pull away half teaspoon-sized chunks of beef grind and set aside. Heat a drizzle of oil in a medium fry-pan on high heat. Cook onion for 1-2 minutes, until softened

Add beef spice blend and cook for about 30 seconds, until fragrant. Add chunks of grind to the pan and continue to cook for about 5 minutes, until browned and cooked through.

Reduce heat to low, add lemon zest, Worcestershire sauce, stock and tomato sauce. Cook for a further 1-2 minutes, until sauce has thickened and reduced. Season to taste with salt and pepper.

While sauce cooks, use foil to wrap tortillas in a stack. Place in oven for 5-6 minutes to warm through.

While tortillas heat, dice tomato 1cm and toss in a small bowl with vinegar and a drizzle of olive oil. Season to taste with salt and pepper. Set aside. Finely shred lettuce and grate carrot. Mix in a large bowl with mayonnaise, lemon juice and sweet chilli sauce (if using). Season to taste with salt and pepper.

fill wraps with beef, tomatoes and slaw. Fold together and enjoy! Serve any remaining slaw on the side.
