This spiced lamb pita is filled with creamy hummus, zingy yoghurt, fresh veggies and sliced almonds. Together with the tender Moroccan-spiced lamb, these flavours will transport your taste buds.
Ingredients
Veggies
- 1 telegraph cucumber, diced 1cm
- 1 carrot, grated
- 1 twin pack baby cos lettuce, thinly sliced
- 2 tomato, diced 1cm
Lamb
- 1 pack Moroccan spices
- 2 Tbsp tomato sauce
- 1/2 cup water
- 500g lamb mince
- 1 drizzle of oil
Pitas
- 1 pack pita breads
To Serve
- 100g yoghurt
- 100g hummus
- 1 pack sliced almonds

Preheat oven to 200°C (or 180°C fan bake), if using oven to heat pitas.

Thinly slice lettuce, dice tomato and cucumber 1cm and grate carrot. Set aside separately on a platter.

Heat oil in a large frypan on medium-high heat and cook lamb with Moroccan spices for 7-8 minutes, breaking up with a wooden spoon, until well browned. Add tomato sauce and water measure and cook for 3-4 more minutes, until slightly thickened and reduced. Season to taste with salt and pepper.

Slice open pitas to form a pocket, keeping a hinge, and lay on an oven tray. When lamb has 5 minutes cook time remaining, bake pitas for about 5 minutes, until warmed through. Alternatively, toast the pitas in the toaster.
