Beef Patties with Cheesy Chips and Sweet Chilli Sour Cream

A fun way to have burgers without the buns!


Ingredients

CHEESY CHIPS

  • 1 bag hand-cut potato chips, any liquid drained
  • 2 teaspoons chip spice mix
  • ¼ cup grated mozzarella cheese

GREEK SALAD

  • ½ telegraph cucumber
  • ½ punnet cherry tomatoes
  • 1 capsicum
  • 1 pouch olives (optional, adults)
  • ½–1 sachet balsamic dressing

BEEF PATTIES AND SWEET CHILLI SOUR CREAM

  • 6 beef patties
  • 1 pottle sour cream
  • 1–2 tablespoons mild sweet chilli sauce

Steps

  1. oven to 230°C. Line an oven tray with baking paper. Heat BBQ hot plate to medium (if using).
  2. Pat chips dry with paper towels and toss with chip spice mix and a drizzle of oil on prepared tray. Season with salt and pepper. Bake for about 25 minutes, until cooked through. Turn once during cooking.
  3. When chips have 5 minutes cook time remaining, sprinkle over cheese and cook until golden.
  4. While chips are cooking, prepare Greek salad. Dice cucumber 2cm; cut cherry tomatoes in half; remove core and seeds from capsicum and dice 2cm. Place all in a medium bowl, along with olives (if using) and balsamic dressing. Toss to coat and season with salt and pepper.
  5. Heat a drizzle of oil in a large frypan on medium heat. Cook beef patties for 4–5 minutes each side, or until cooked through. Remove from pan and set aside, covered with foil, to rest.
  6. In a small bowl, mix sour cream and sweet chilli sauce together and set aside.
  7. Divide cheesy chips between plates. Top with 1–2 beef patties and a dollop of sweet chilli sour cream. Serve Greek salad on the side.
