Bacon and Basil Pesto Pasta with Caesar Salad

Ingredients
BACON AND BASIL PESTO PASTA
- 350g spiral pasta
- ¼ teaspoon salt
- 1 pack streaky bacon
- ½ bunch broccolini
- 1 courgette
- 1 punnet cherry tomatoes
- 1 pottle basil pesto
CAESAR SALAD
- 1 baby cos lettuce, roughly chopped
- ½ cup shaved Parmesan cheese
- 1 pottle Caesar dressing

Add boiling water and salt to a medium pot on high heat and bring to the boil with the lid on. Add pasta, stir and cook for 10–12 minutes, until just tender. Drain well and return to pot with a drizzle of oil to prevent it sticking.

While pasta cooks, heat a drizzle of oil in a large fry-pan on high heat. Slice bacon 1cm and cook for 3–4 minutes, until golden. While bacon cooks, roughly chop broccolini into bite sized pieces and grate courgette.

Add broccolini to pan and cook for about 1 minute. Add cherry tomatoes and cook for 1–2 minutes, until broccolini is tender and tomatoes are warmed through.

Remove from heat and add drained pasta, courgette and basil pesto. Toss well and season to taste with salt and pepper.

Add all Caesar salad ingredients to a medium bowl and toss to combine. Season to taste with salt and pepper.

Divide bacon and basil pesto pasta between bowls or plates and serve Caesar salad on the side.
