Soy-Glazed Beef with Soba Noodles

Ingredients
SOY-GLAZED BEEF
- ¼ cup soy sauce
- 1½ tablespoons runny honey
- 2 teaspoons ginger, finely grated
- 1 teaspoon rice vinegar
- 1 clove garlic, finely chopped
- 1 teaspoon mixed sesame seeds
- 300g beef rump steaks (at room temperature)
- 1 tablespoon water
SOBA NOODLES
- ½ pack snow peas, stringy part removed
- 1-2 spring onions, white part only
- ½ Lebanese cucumber
- 2 bundles dried soba noodles
TO SERVE
- 1 tablespoon crispy shallots
- 1-2 spring onions, green part only, finely sliced

a medium pot of salted water to the boil. Preheat BBQ hot plate or grill to high (if using)

Place all soy-glazed beef ingredients in a small pot (except beef and water) and bring to the boil. As soon as it boils, reduce heat to a simmer and cook for 3–4 minutes, until thickened and reduced slightly. Set aside. Pat beef dry with paper towels and season with pepper.

Heat a drizzle of oil in a large frypan on a high heat. Cook for 1–2 minutes each side for mediumrare (depending on thickness), or until cooked to your liking. Set aside on a plate, brush with soy glaze and cover with foil to rest for 2–3 minutes. Add water to remaining glaze and set aside.

While beef rests, prepare soba noodles. Finely slice snow peas and spring onions on an angle, dice cucumber 0.5cm and set both aside.

Cook soba noodles in pot of boiling water for 3–4 minutes, until just tender. Drain well and drizzle with a little sesame oil to prevent sticking.

Add drained noodles to the remaining glaze, along with all remaining soba noodle ingredients. Gently toss to combine. When beef has rested, thinly slice against the grain.

Divide soba noodles between bowls and top with soy-glazed beef. Sprinkle over crispy shallots and green part of spring onions to garnish.
