
Middle Eastern Beef Loaded Wedges with Yoghurt Mayo & Cucumber Crunch Salsa

Have a go at our take on loaded wedges with a Middle Eastern twist! Packed with savoury goodness and served with a refreshing cucumber salsa for balance – a choice meal for the fam to enjoy!
Ingredients
Wedges
- 800g potatoes, cut into wedges
- 1 pack yellow spice
- 1 drizzle of oil
Salsa
- 1 telegraph cucumber, finely chopped
- 2 tomato, finely chopped
- 100g baby spinach, roughly chopped
- 1 drizzle of olive oil
- 1 Tbsp vinegar
Beef
- 1 drizzle of oil
- 600g beef mince
- 1/2 tsp salt
- 1 pack Middle Eastern spices
- 60g tomato paste
- 1 cup beef stock
Yoghurt Drizzle
- 1/2 tsp honey
- 100g yoghurt
- 1 Tbsp mayonnaise

Preheat oven to 220°C (or 200°C fan bake). Cut potatoes into wedges. Toss on 1-2 lined trays with yellow spice and oil. Season with salt and pepper. Roast for about 25 mins until golden and tender. Want crispy potatoes? Swap trays halfway through cooking time.

Finley chop cucumber and tomato. Roughly chop spinach. Add all to a medium bowl with olive oil and vinegar. Toss to combine.

Heat oil in a large frypan on high. Cook beef and salt for about 5 mins, until browned. Add Middle Eastern spices and tomato paste and cook for about 2 mins, until fragrant. Add stock and bring a to a simmer. Reduce heat to medium and cook for about 3 mins, until thickened and reduced. Season to taste with salt and pepper.

Add yoghurt, mayo and honey to a small bowl. Mix to combine.

Load up those wedges! Top with beef and salsa and drizzle over yoghurt.
