Perfect Pork Dumplings with Soba Noodle Slaw & Chilli Oil

Celebrate national dumpling day with us, with not one, but 2 dumpling flavours! Our friends at the House of Dumplings have hooked us up with two epic flavour combinations, Vietnamese Pork & Lime and Shanghai Pork & Cabbage. Paired with chilli oil and a vibrant soba noodle slaw, you’ll be spoilt for choice with these!


Ingredients

To serve

  • 1/2 pack soy dipping sauce
  • 2 Tbsp sweet chilli sauce
  • 2 Tbsp chilli oil

Dumplings

  • 1 drizzle of oil
  • 1 pack pork & lime dumplings
  • 1 pack pork & cabbage dumplings
  • 1/3 cup water

Salad

  • 1/2 pack soy dipping sauce
  • 1 pack black sesame seeds
  • 150g slaw
  • 200g mung bean sprouts
  • 1/2 pack soba noodles
  • 2 tsp sesame oil
  • 2 radish, thinly sliced
  • 2 carrot, peeled into ribbons
  • 1 bunch coriander, leaves picked

Steps

  1. Bring a medium pot of water to the boil.
  2. Cook noodles in pot of boiling water for about 4 minutes, until tender. Drain well and add to a large bowl with sesame oil to prevent sticking.
  3. Heat oil in a large fry-pan on medium-high heat. Cook dumplings, flat side down, for about 2-3 minutes, until golden underneath. Add 1/3 cup water to pan and cover with lid. Cook for 2 minutes. Remove lid and cook for a further 1 minute, until hot through and any remaining water has evaporated.
  4. Thinly slice radish, peel carrot into ribbons, and pick coriander leaves. Add to bowl with noodles along with slaw, mung beans and sesame seeds.
  5. Toss salad with first measure of soy dipping sauce and mix to combine. Mix second measure of soy dipping sauce with sweet chilli sauce and set aside to serve.
  6. Soba noodle salad topped with dumplings, sweet chilli dipping sauce and chilli oil.
